For the same reason a snapping turtle will try to bite your foot off if you tap him on the head with your foot, cause you're pissing it off.

Well,i had water turtles,one of them bit me and another was trying to but i believe they just thought my finger was food.I'm not sure.

This is actually right up my alley... In my younger days, I was quite a herpetologist, specializing in turtles, tortoises, and terrapins. And, yes, there's a difference.

The main thing is, DON'T mess with sea turtles! They can bite your damned fingers off!

Now why do they bite? Easy.

Imagine that I'm right there in front of you, and I'm sticking my big man-fingers in your face for no goddam good reason. Big stinky fingers comin' at ya, and you can't do anything! What do you do?

You BITE it!

Right. This is a no-brainer.
