this is a nice, cold salad for summer time and it is real easy to make.
take a load of tomatos, as much as you want and cut them into wedges. then take a sweet onion and cut it into thin strips. drizzle with olive oil and add minched garlic.
then, grub out.
i could eat this salad every damn day. it really is good for the summer time

I love this type of salad, but I have a different list of ingredients for you.

6 tomatoes chopped into cubes
1 Vidalia onion cut in half and sliced thin
6 canned artichoke hearts cut in quarters
10 black olives cut in half with pits removed
1 cup Feta cheese crumbled
1 green pepper cut into cubes

Dress with a simple 1/4 cup of extra virgin olive oil and a splash of wine vinegar.

Salt and pepper to your taste and a sprinkle of oregano.
Stir it all together and it's so good......


EDIT: My bad, I forgot the garlic.
Always use fresh chopped or crushed garlic. Too much makes it unpalatable, but just enough makes it perfect. A couple pieces through a crusher is enough for most people because it's raw and much stronger.

Sounds like a Horiatiki (Greek) salad except substituting cucumber with artichoke.

Yum yum.


The only thing I would suggest for that is if you're going to make it, go to a specialty store and buy the good Greek feta cheese. It makes all the difference.


Still ... yum!

guess my version is the lazy way.
diced tomatoes
diced cucumber
diced onions
Italian salad dressing-to taste
Parmesan cheese-to taste

It depends on how many Iam having for dinner as to how much of this salad I'll make, but it's a favorite around my house.

A quick and easy salad that everyone enjoys.


We might need to call this a fruit salad soon because cucumber, tomato, olives, and the grapes to make wine vinegar are all fruits.


Does anyone else put salt on cantaloupe.

It's the only way I can eat it.

My version of this has no tomatoes.
I put olive oil with vineger and raspberry vinegrette in a bowl and toss in some cucumber and onions.
Let it sit in the fridge for a half hour before eating.

I was gonna say that some pieces of buffalo mozzarella would set that off nicely, along with some olives of course.
