ok holiday menu for veggies
i guess darlin will post a recipe for the german traditonal "goose roast"

soup:
pumpkin cream soup

we can use fresh pumpin or pumpkin purree#
(amount depends on number of guests)

if you use fresh pumkin, just cut it into pieces, put some oil in the pot and let the pumkin pieces frie for 5 minutes.
add 1 l / 2.1 pint water
let simmer until soft, about 15 minutes

if using purree
put also some oil in the pot, add purree, and fill with same amount of water as stated above.

when pumpin is soft, purree in a food processor

season with veggie broth, salt, pepper, nutmeg and a little cinamon.

you can serve it with a bit of cream and roasted almonds

entree
seitan mushroom goulash
serves 4 persons

for the non veggies: seitan

250 g / 8.8 oz seitan
cut it into pieces

fry in a deep pan with a little oil
add mushrooms

you can use:
white mushrooms



oyster mushrooms



porcinos


#-ake


portobellos


what ever you like
i mix different kinds, depending on what i get.

cut them into slices and fry them with the seitan.

take 1 glass of red wine and pour it over the seitan and mushrooms, i dived the content of the glass into 4 pourings.
the alcohol will boil away.

if you want to avoid the alcohol, use veggie broth!

than cast on between 1 pint to 2 pints of water (0.5 - 1 l)
add some cranberrys
season to tast with salt, pepper, veggie broth, a little cinamon, a little all spice and grounded bell pepper.

serve the entree with either dumpling or bread dumplings
i don.t do them by myself i just buy them in packages and follow the guidelines on the package.

veggie sidedish:
red cabbage

i use to buy it frozen or in a jar.




even if the manufacturer claims: ready to eat i use to fix it a bit by myself

pur some oil in a pot, add red cabbage, add 1 or 2 cloves, 2 apples cut into pieces, (without peel and core) and a handfull of rock candy

season with a little salt, some nutmeg and cinamon


dessert:
roast apples with vanilla sauce

this is very delicious and kids just love it

take as much apples as people are around.

don.t peal the apples
but cut out the core



this instrument is very helpful for it!


than fill the apples with marzipan.
if you like it you can add some raisins which you mix with the marzipan

i also spread some of the marzipan over the apples

put the apples in a deep buttered pan and bake them at medium heat until the peel burst

meanwhile prepare the vanilla sauce

i usually take a package of soy milk (1 l / 2 pints) and heat it,
3 teaspoons of flour mixed with some cold soymilk will be added when milk boils and than it thickens,

pour over apples when serving or just put a jar with the sauce on table and everybody helps themselve!

last but not least
very important for my family but not german at all

eggnog

vegan eggnog to be precice.

20 ounces silken tofu
16 ounces vanilla soy milk
2 tablespoons pure vanilla extract
1/4 cup vegan sugar (or favorite substitute)
3 tablespoons vegan brown sugar (or favorite substitute)
1/4 teaspoon ground cinnamon
1/2 cup vegan rum (optional)
1/2 cup vegan brandy (optional)
Freshly grated nutmeg

blend it all in a food processor

chill it
enjoy it


you can leave the alcohol out of it or for those who like more alcohol just add more.

Nah, no goose from my side...sorry.

I think I am going to find something else, cause I prefer them swimming on a lake and not roasting in my oven.

my mom used to make "sauerbraten" – marinated beef.


ah i completely forgot: christmas eve!

some people in germany use to eat potatoesalad and sausages
my family used to eat "schnitzel" with cheese cream sauce

for those who like meat, yeah you can do it with meat aswell.

i usually get 2 vegetarian steaks , fry them in a pan.


the most important thing is the sauce.

fill a deep pan with liquid cream, usually i take 200 ml per person, than add 200 g /7 oz of soft cheese per person.
let the cheese melt well, than season to taste: salt pepper, bell pepper and if you like a little veggie broth

serve with toast
