We just steamed up a couple of Big Fat Artichokes. On sale for a buck each.
I usually dip the leaves and hearts in Butter, or Italian dressing.
But all we had was Vegetable dip, Dill flavored..Man they were awesome.
Some of the best I've had.. The dip was perfect with the flavor of the Artichoke.
I don't like the marinated types..I like them Fresh..
Oooh....I like to put them into a dip.... Its SUPER cheesy (not good if your lactose intolerant)... Its best for an appetizer for a group of
people...otherwise you are likely to eat the whole thing..(well at least I do...)
- Lots of Chopped Artichoke Hearts (marinated or fresh[steamed then])
- Mozarella Cheese (1/2 cup)
- Sour Cream (1/2 cup)
- Fresh Chopped Spinach or Frozen (thawed & drained) (1 cup)
- Cream Cheese (1/4 Cup)
- Garlic (chopped up - As many cloves as you are comfortable with - like 3ish)
- Seafood (Totally Optional - Crabmeat, or baby shrimp etcc..)
Seriously. This stuff mixed all together, and then baked in the over for like half an hour ish....its amazing with Pita Bread...or with Tortilla Chips
etc..
Deadly.

I've had some similar dips as an appetizer at restaurants before.
They were pretty good, but your recipe sounds much better..I like the idea of adding some seafood too.
