These are cookies of the "crunchy" variety.
1 cup butter flavored Crisco (shortening)
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
2 teaspoons vanilla extract (PLEASE use real, not imitation!)
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups (1 bag) dark or regular chocolate chips
Preheat oven to 350 degrees. Grease cookie sheets.
In a large bowl, cream together the Crisco (shortening), brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well
with each addition, then stir in the vanilla.
Combine the flour, baking soda and salt in another bowl; gradually stir into the creamed mixture. Finally, fold in the chocolate chips.
Drop by rounded spoonfuls (or, better, use one of those tiny ice cream scoops!) onto the prepared cookie sheets.
Bake for 11 to 13 minutes in the preheated oven, until light brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack
to cool completely.
Makes about 2 dozen big cookies.
I made these a couple weeks ago and watched a friend eat a dozen of them in 1 sitting, and my downstairs neighbor came knocking on the door at
midnight because she was craving more.
