Simply music alters thought the ancient greeks knew this and hence they limited the number of strings a musical instrument may have.

^Do you have a source for that claim?

The Greeks invented the Kithara which had 12 or more strings and eventualy gave name to the guitar.
They also had the the Zither, which has 45 strings.

The number of strings is more a thing of practicality, six is a good number for guitar for example simply because of the way our hands work.
