For me, like many others it depends on the use.

Co-jack and cheddar just to snack on by itself.
Swiss and provolone for hot sandwiches, American cheese for cold sandwiches.
Blue cheese in dressing form for salads and chicken wings
Mozzerella and parmesean for pasta dishes,

and I absolutly LOVE ricotta cheese.

To choose only one kind of cheese as ones favorite would be a sin! I have many favorites, pending on the situation.

Provolone: Ham sandwich

Co-Jack (shreaded): I put this on ANYTHING that need melted cheese

Parmasan(sp): NOODELS!

Cheese!
Oh I thought y'all meant the smile in front of cameras.

I can eat the familiars ones: any cream cheese (spreads for bagels), Monterey Jack, Brie and Camembert, Feta, cottage cheese (well, sometimes the texture reminds me of my thighs), Ricotta, Provolone, Mozzarella (especially the pulling off the strings from those sticks), Gouda, cheese made with jalapeno, and others...

I have not tried alot of cheeses but I do like smoked chedder, and a good goat cheese

A nice ripe and soft blue cheese. I cannot get enough of it much to my wife's dismay. She is afraid I will keal over and die from eating it...nothing better with a rare filet...man I'm hungry

Now I've had steak with blue cheese mealted on top of it and I have to say it was very good. But thats the only way I have ever had blue cheese.

Take it from a stinky Greek Boy... who loves stinky cheese.

If it's funky, it's for me lol..

But, if you want awesome feta, try:

Greek Dodonis Feta (google it) - Sheep's milk feta that is creamier and milder than the barrel feta.

That's one of my favourites...

Brie bores me, but I like a nice stinky camembert as well.

Edam, Gouda, Cheddar...the list goes on.

Blue Cheese, always.

Roquefort every time for me given the change.

(Unless it is a nice piece of cheddar and Branston Pickle with a Ploughman's lunch!
