I'm amased that no-one has yet mentioned the F22 Raptors in Iron Man or Starscream in Transformers....

And the F35 Lightning 2 at the end of Die Hard 4.0...

oh and the Spitfire's and Hurricane's in "Reach for the Sky"

Also in Iron Eagle I & II it was F-16, not F-15; plus IAI Kfir and F-4E Phantom II

Modified Eurocopter SA-330 Pumas, Aerospatiale Alouette III . Rambo 3. although they were meant to be different helicopters such as a Hind Mi24.

Lets see...a documentry called 16R, about a old airport in California. Actually a great film.

Junkers Ju 52 Where Eagles Dare (awesome movie)

Storch The Eagle Has Landed About a fictionalized plot by the NAZIs to kidnap Churchhill. Also a great movie!

F5 Used in Top Gun as the adversarial fighters to act as MIGS. The movie did not actually have any MIG aircraft in it I don't think. Could be wrong though?
