When I was living alone, I lived off alot of rice and seafood. Here is one of my favorite ways to cook it.
Ingredients:
1 1/2 Cups Rice, Either Jasmine, Calrose, Or Basmati
3 1/4 cups water
2 tablespoons chopped FRESH rosemary (do not use dried)
4 cloves of garlic, chopped or pressed
2 cubes of vegtable stock
2 teaspoons fresh ginger, finely grated or chopped
1 half bag frozen lima beans
1 1/2 pounds peeled and cleaned shrimp
2 teaspoons sea salt
2 tablespoons toasted sesame oil
Preperation:
1. Clean and rinse rice thouroughly with cold water, strain well.
2.To a large pot or pan, add water, 2 cloves of garlic, one tablespoon rosemary, salt, and ginger. Bring to a boil.
3.In a frying pan, add rest of garlic and rosemary, sesame oil, and shrimp. Over medium heat fry and stir until shrimp is very cooked, slighty dry and
crunchy.
4. While cooking shrimp, add rice to water and bring to a boil again, then reduce heat and simmer. Cover and let simmer until all the liquid is
absorpbed.
5. When shrimp gets slightly browned and slightly crunchy, add frozen lima beans and continue to stir and fry until lima beans are slightly browned
or at least fully thawed and cooked.
6. Uncover rice, fork it until fluffy. Add shrimp and lima bean mixture and mix well. Serve.
