Salmon Loaf

Ingredients:

One can (14.75 oz) salmon, NOT drained
1/2 cup cream (you can use milk...I use cream for fewer carbs)
1 egg, beaten
1/2 cup cracker crumbs

Preheat oven to 350F. Combine ingredients, place in 5X9 loaf pan (I usually spray cooking spray in it, easier to clean up afterwards), bake for about 1 hour.

I'm eating some right now, and my son seems to like it.

You can probably try to fry it as patties too...I never tried it. My mother says my grandmother used to make salmon patties.
