May's Satay King Prawns - Quick Easy and Tasty

I kilo green (raw) prawns (shrimp) peeled with tail intact
4 to 6 cloves of garlic chopped
1 to 2 teaspoons sweet chilli sauce
2 to three tablespoons peanut butter (depending on taste)
peanut oil
chopped onion
chopped green or red pepper (capsicum)
1/2 teaspoon chicken stock (One again I use vegeta)
water
dash of cooking sherry (go easy on this you dont want the sherry to take over the flavour)
rice

heat oil in a wok
add garlic onion and pepper
stir and add shrimp
add peanut butter
add sweet chilli sauce and dash of sherry
add stock and some water to smooth to correct consistency
stir for a couple of minutes until the prawns have turned orange but are not overcooked

serve on a bed of steamed rice (jasmine rice is best)

*footnote.. a teaspoon of tomato sauce or bbq sauce is a tasty addition too
