Place the croissants on a baking sheet, bending them into crescents. Allow them to rise further in a draught-free place for 15 - 45 minutes, depending on the room temperature. Brush with beaten egg yolk and bake in the oven at 425 degrees Fahrenheit for about 10 minutes.
