2 large or 3 small eggs
1/2 onion, finely sliced
1/2 tomato, finely chopped
1 tsp curry powder
2 tbsps cilantro/coriander - coriander works best, but cilantro is nice too.
1 tsp oil to fry
Salt & Black Pepper, to taste.
You need to use a non stick pan for this omelette.
Heat the oil and fry the onion till golden brown. Beat the eggs, adding salt and pepper. Reduce the heat by half and add the eggs over the onions to
cover the pan. Quickly sprinkle the curry powder, then tomatoes and finally the cilantro. Cook for a minute or so till the omelette is firm enough on
one side to flip over.
Garnish with a sprig of cilantro, and devour!
(You can add grated cheese too, after cooking, which adds a lot of denseness - might be a little too much for breakfast!)
