Supersonic bullets make a "crack" sound, it's a small sonic boom, so you'd probably hear something louder if a larger supersonic object flew past you.
How loud depends not only on size as you guessed, but also shape, speed, and altitude.
The sonic boom is a shock wave which doesn't just make sound, but subsonic (transonic) and supersonic shock waves from fast moving objects can affect
the terrain as seen with the first jet in this low pass video which kicks up a lot of dust, something we don't see in the subject UFO video as we
might expect to see if it was a real fast moving object as some people seem to think.
