40k rockets & 4.5k satellites, but not a single video of thrust initiation in vacuum of space?

Spent past hour googling for vids on YT or elsewhere of rocket combustion being initiated in space.

Instead, solely GoPro videos taken from Earth, and SpaceX rockets all doing the same thing: launch, continue to burn, separation, and return.. but no actual burn initiation. Per space.stackexchange.com... nearly 40K rockets been launched into space and 4.5k sats orbit earth (wonder how many have cams on em?).

So why no video at all of any object in space initializing combustion gases -which are sucked out into the alleged absolute vacuum of space- yet somehow achieving velocity/acceleration?

Perhaps for comparison, does an unknotted balloon of air let loose in an absolute vacuum start flying around wildly,

or does it simply deflate into the vacuum space without flying around much?

Simple answer is deny ignorance. A simple web search can answer your questions.
As per video. . .
I think that is low on the rocket teams for outside of atmospheric combustion.

To your question relating to the balloon: It really depends in what it was filled with, and where it was UN-knotted.

With all respect to you. I feel like this OP needs a bit more focus to be able to be discussed. There are a lot of open variables which will change the answers.
