With the outdoor bbq season upon us, what do you prefer.....lump charcoal or briquettes.

I know you didn't ask me, but I've played with both quite a bit.

If you are grilling a steak over direct heat, lump charcoal all day everyday.

If you're creating a heat base for a smoker and it's windy, and you need to maintain temp, I buckle and get briquettes.

I make sure they are fully lit and white, then add my wood, keep everything open, and make sure the wood is well ignited.

The best smoke is the smoke you can barely see, you only get this if your fuel is burning efficient.

i have about 20 of those containers. I put everything in them

- basil oil
- raspberry reduction
- ganache syrup
- chili oil
- bbq sauce/vinegar sauce

I use them quite a bit to handle small batch tasties like what i listed above.
