It's fairly obvious that you don't know a damn thing about this topic. Hydro-electric power is only about 8% of US electrical generation; so "taking out all the dams" is not really a threat to the overall system. Additionally, hydroelectric dams are generally tens of thousands of cubic meters of earth and concrete. In real life you cannot rupture a dam with a suitcase of explosives like it was a James Bond movie

Crude oil will not burn readily unless under compression, and it requires substantial surface area in contact with oxygen to maintain combustion. Pipelines full of oil cannot burn because there's no oxygen inside them.
The main vulnerability is SCADA, which stands for Supervisory Control And Data Aquisition. It is a way of controlling a geographically dispersed system, like a high voltage power-line network, or all the pump jacks in an oil patch. SCADA systems are vulnerable to hacking, and to electrical surges/interruption, as well as electromagnetic pulse.
