It's my own recipe (from inside my head!!)
Do you guys have "Stock Cubes"?
I usually use:
1x Ham Stock Cube
1x Chicken Stock Cube
1x small finely chopped onion.
1x large carrot diced
1x large carrot grated
2x parsnips diced
1x large potato diced
A large handful of lentils
A small handful of Pearl Barley
A large sprig of fresh chopped parsley (or large shake of dried parsley)
Some Black pepper to taste.
Bring some water to the boil. (About 1 - 1.5 pints?)
Add the stock cubes, lentils, barley, onion and diced veg & stir.
Add the grated veg and parsley & stir.
Leave to simmer for at least one hour stirring occasionally.
Taste & season accordingly.
HANDY HINT:
I then take two cups (or large ladles) of soup from the pot and blitz them with a blender, then return the blended soup to the main pot. (This gives
the soup a lovely creamy consistency, without losing the bite of the diced veg!)
Serve with warm buttered crusty bread.
Enjoy.
