Why are there no stars?

Because the sunlit Earth and rocket are in the view, and the camera's exposure was set for that. Stars are very dim.

You can see this for yourself: Watch an airplane at any altitude flying overhead. After it passes overhead, watch it fly away. Its nose is pointed at the horizon, probably at a steep angle; but this does not mean the plane is crashing - or even losing altitude.

Wrong. Ancient Greeks starting with Pythagoras proved the earth was not flat 2500 years ago, and no one thought it was flat in the middle ages. All learned people have known the earth was a sphere.
