I am not afraid of unpasturized cheese, as long as the milk was handled right and the cow was fed a diet that increases monolaurin and lactoferin in the milk.

Here is an article that talks about the way our regulatory agency is supposed to work. www.ncbi.nlm.nih.gov... People think just because something is GRAS that it is safe no matter what. The information about this has been available for a long time, but people had to look in the right place for it and not assume things without any evidence to back the belief they held. I study food chemistry a lot and find this article so simple to read. But then again, I deal with names of enzymes and pathways. I do not like fad nutrition.
