Except it's a video taken right outside the ISS. Google Earth can't provide that.

That's just semantics. The correct term for this is EVA aka extravehicular activity.

I dont get why we dont have footage of them doing the cooler stuff like boarding and leaving the ISS.

We have plenty of footage of that.
