I have seen and personally hired locals who had stellar resumes and didnt come close to working out.
I had to hire a European chef because I was scared I was in the twilight zone trying to hire a decent local person. In NYC.
The best in that industry ARE NOT American.
Only male gay actors make the best waiters in NYC. Only tom boy females are flawless cocktail specialists. Only old Mexican guys can run a busy NYC kitchen like it was nothing without losing their minds.
There are exceptions. The thing is, no one cares. You have to prove you arent going to be like 90% of people walking in.
Its hard to find a "100% local" in the hospitality industry that will work out. Look around. Its true.
