never marinated in pineapple (well...other than pork).

Now im gonna have to experiment. Maybe some mango chutney or something....that sounds really good.

Pineapple juice is a great ingredient to marinate meats, as it breaks-down the tough connective tissue much better than a highly-acidic marinade made from vinegar and gives it a slightly sweet flavor, instead of the "sourness" of vinegar-based marinades. In my opinion.

Mango is also a great addition to a marinade, as is garlic, but always remember to save the marinade for future use. You can simmer it down to a nappe consistency for a rich sauce to compliment the cut, or quickly brought to a boil and thickened with corn starch if you need a higher quantity of sauce.

only thing ill add: papaya. It has papayin, which can make any meat mushy tender if you overcook it. But its great for tough beef.

And milk. you can't cook many dishes in milk, but beef simmered in milk will fall apart.

I soak snow goose breasts in milk and Italian dressing overnight before cooking.
