Here is a personal recipe of mine that I put together. I usually do it in a crock pot, but cooked in a clay pot is the same.
Slow Cook Chicken Stew
Ingredient List
• 1 small while chicken
• 3 12oz cans of chicken stock
• 5-6 small potatoes (Yukon Gold preferred)
• 1 bag of baby carrots
• 2 tbsp butter
• 1 tbsp Thyme
• 1 tbsp Rosemary
• 1 tbsp Onion Powder
• 3 Bay Leaves
• Salt
Base Preparation
1. Peel the potatoes and cut into approx. 1 inch cubes
2. Place the cubed potatoes into the crock pot
3. Place the contents of the bag of baby carrots into the crock pot
4. Pour into the crock pot enough chicken stock to just cover the vegetables
5. Place the 3 Bay Leaves into the pot
6. Cover and turn on the crock pot to the low setting for 8 hrs
Chicken Preparation
1. Rinse and pat dry the whole chicken
2. With your fingers, separate the skin from the breast meat keeping it attached to the chicken (slowly work your fingers between the skin and breast
meat to separate while keeping it intact)
3. Insert 1 tbsp butter under the skin on each side, working it along the breast meat as much as possible (this will continuously baste the meat
slowly as it cooks over time)
4. Sprinkle the chicken with salt and onion powder to taste
5. Using a spoon, insert 1tbsp Rosemary into the chicken cavity
6. Using a spoon, insert 1tbsp Thyme into the chicken cavity
7. Place the prepared chicken into the crock pot directly atop the vegetable and stock mixture
Cooking
Cover and let slowly cook for 7 hrs on low. During the cooking time, the amount of liquid will increase twofold (or more) slowly engulfing the
chicken. Check the progress of the chicken at the 7hr mark. If the chicken has cooked to the tender state (it will easily separate as you try to move
it), remove the chicken from the pot. Re-cover the crock pot and allow the chicken to air cool for approx. 20 minutes (or until it is possible to
strip the chicken safely with your hands).
Once the chicken has sufficiently cooled, remove the skin and discard. Begin to strip the meat from the bones. Cut or break the pieces of meat into 2
inch sized chunks. Once the chicken is fully stripped, discard the bones and put the meat back into the crock pot for the remainder of the cooking
time. Stir and cover. This will allow it to better blend the flavors into the meat itself.
