A knife is diffrent than a gun, you dont need to shoot someone to take him out.

In the US alot of cops dont use stab proof vest since a cop is much more likely to get shot the stabbed. People like Corrections officers do often make use of stab proof vest since in a prison you have a high chance to get shanked and not shot. IMO stab proof vest dont really make a difference since anyone close enough to stab you could just a easliy go for your neck.

When someone is comming at you with a knife there is no difference its a lethal weapon Cops dont shoot people in the legs to wound that just in the movies. Cops have less lethal options though like Air Tazers but if a person is within 21ft of you he can stab you before you can get any weapon out lethal or less-lethal
