Those would work so much better for everyone!
Unfortunately I can't use eggs either. The pulverized oatmeal is what I use as a binder now in meatballs and meat loaves. That's why I thought it might work for the cookies, I tried to take the easy way out and chose not to pull out the blender. The arrowroot is nice because it doesn't have the flavor that coconut has. I chose millet instead at the last minute because my husband isn't a fan of the coconut. The arrowroot might help bind them a bit though. I may try again with a few other tweaks.

Having to learn how to cook again is aggravating. No bake cheesecake has replaced most of our homemade goodies. I got over excited and missed having Christmas cookies.

try these ideas......from what I have read, GF needs fat....so I'd go with the oil or full fat yogurt, if dairy is allowed.

I haven't made these yet, and may not make them until after Christmas....but they look good and I've been told they are awesome.
The "real" recipe calls for 2 cups of sugar.....but you can use other sweeteners to make the two cups.....the below is my choice to cut calories and carbs.
You can also use quick oats, but I prefer rolled oats.

GF NO BAKE COOKIES aka PREACHER'S COOKIES
1/3 cup cocoa, or 3 - (1 oz) squares unsweetend
1 cup erythritol
1 cup sugar
1/2 cup milk
1/2 cup butter, 1 stick
1 tsp. vanilla
1/2 cup coconut, flaked, unsweetened, OPtional
2 1/2 cups rolled oats
1/2 cup peanut butter (smooth or crunchy)

Mix cocoa and sugar in heavy pan. Add milk and butter.
Bring to a rolling boil for 1.5 minute....no more, no less.
Remove from heat. Add vanilla and peanut butter.
Stir until melted. Add oatmeal.
Spoon on waxed paper and let cool.

Makes about 40.
About 87 calories, and 9 net carbs each.

No-bake cookies... now you're talking my language !




Hubby is the cookie baker in the family, I hate baking anything where you have to sit in front of the oven waiting to pull them out at the exact second to get them just perfect.
