For everyone who suggested asafoetida, thanks you! I'll try this, but if I start feeling the need to sing to people in the airport and dress in shapeless robes....well it's your fault.

You can try Galangal it's a lot like ginger and used in many Thai - SE Asian - Indian dishes. Since it's related to ginger unfortunately it may have similar effects.

I love cooking Asian diashes too! The matter is the Asian food is supposed to be spicy. So you are right, without garlic it looses its original taste.
I would probably advice to try some different types of flavoring/spices just to replace real garlic.
