I would say Catholic symbol rather than Christian.
Catholics ARE Christians.
You could say it's a Catholic symbol and not a Protestant symbol.
The Catholic Church has not used it as a symbol in its churches for a long time. The Church has basically abandoned the symbol when the masons started using it.
eg; Evangelical fundamentalists = Catholics
Evangelical fundamentalists, who also condemn the Church’s use of pre-Christian Greek and Hellenistic philosophy.

I was in a catholic church in Italy a few years ago and the domed roof had an amazing fresco.
The centerpiece was a huge all seeing eye maybe 6-8 feet in size.
I was somewhat suprised but saw a few more along the way although never so prominent.

out of Europe I would search the history of the specific church you seen this in...
lots of turmoil and divisions during the reformation.

While suffering through another round of Church today
I don't go to any church and I certainly wouldn't start just because everyone else does.
It reminds me of living on Koh Lanta (island off Thailand) and all the 'Muslim' lads I was partying with would trot off to the morning call to prayer even though none of them believed in any god. Even crazier was that I was partying with them drinking alcohol while they were all doing amphetamine because the village elders couldn't smell it like booze.

The Freemasons had (have) their own versions too.
