Some aviation application uses 3mm plywood covered with fiberglass or airplane fabric. I don't know how much strength these materials add or if it's for protection of the wood matrix. One thing that I'm sure is that it makes the surface much smoother. On wooden rotor blades, airplane fabric stops delamination of the skin.
