Ive tried snails, that was a weird experience.

Hi Biigs, thanks for commenting on my post.

What you forgot to mention is how snails are prepared :

This is how my father in-law taught me how to prepare them and I still adhere to this tradition... I have to... I live in France!

During the snail hunting season over here (yep... there is a snail hunting season
, the best day to go out hunting snails is after a heavy rainfall.

Once you have gathered enough snails (I usually bag about 60 to 100 snails) the big Bourgogne ones with a white shell as depicted below but grey snails are just as good :



The "Petit gris" or Grey snail :



You then have to place them in a small enough cage so that they cannot escape and feed them at least 1 to 2 lettuce per day for 2 weeks in order to fatten them up (so to speak)...

Then... Leave them to starve for at least 6 days so that their intestines are completely empty.

Then comes the gory part :

Take the snails out of the cage and place them in a bucket with a couple of handfulls of salt (the salt will pull out all excess water from the snails...)

This must be performed at least 4 times, thoroughly rinsing with cold water between each salting process.

Once the snails are *coughs* dead... ensuite (as zey say in French) : Boil a big pan of water and chuck the snails in... from time to time take out a snail and check that the body is not too floppy or not too hard...

Also from time to time take off the froth which will appear at the surface of the boiling water.

After the snails are boiled and are just firm enough, remove them from the pan and rinse them with cold water (leave the snails in a bucket of cold water for about 2 hours).

The snails should then be taken out of the water and left to dry off in a colander (giving them a shake from time to time to get rid of any exess water).

Once they are dry the most difficult part is removing each snail from its shell with a needle.

Once all snails are removed from their shells, place about 12 snails in a small bowl with chopped up garlic (amount depending on how you like garlic) and add a knob of butter (hazelnut size) and then place in the oven for about 20 minutes.

Ps. You can also just chuck all the snails into a large casserole and add 1 kilo of butter and a couple of chopped up cloves of garlic... the best part is mopping up the garlic butter once you have finished the snails... But don't forget your cholestorol tablets.

Served with a nice chilled glass of Chardonnay.

Every 14th of July we have a tradition in my wifes family.

13 people : and about 1000 snails... as well as a couple of decent bottles of Chardonnay.

lagomorphe - i had to google that.

One of the things thats always put me off about lagomorphites - myxomatosis - a debilitating disease that cripples them completely.

Ive put more than a few out of their misery in the past.

Though i wouldnt shoot beezer or wabbit even if they were infected!!!

Can you eat meat and be an animal lover? of course you can.

I love meat and i love animals, but would i shoot a lion? No i wouldnt, but if one came at me? Damned sure id try, im not being anything else's dinner.

Some animals deserve more respect that others. Some spread diseases and infect other more respectable animals, rodents like rats for example - cant eat but theres so many shooting the ones that cause the problems, is not remotely hurting the general population.

The other larger bred animals, we couldnt just allow them to roam free and unfarmed. Ever seen how much danage a wild boar can do to land and people? Savage, if you have to shoot it, why not eat it after too?

I think people make too much of a noise about this.

I am an animal lover.. but if I don't eat at least a little meat occasionally I suffer.

It would be great if all of the meat I ate was raised free-range or at least raised comfortably outside, where the animals had some sort of life, but I do not have the luxury of making sure all of my meat is free-range.

I also feed meat to my cats.

What infuriates me is when I see people at restaurants order meat dishes and then leave leftovers on the plate to be thrown into the garbage. If you are going to take part in taking another beings life, at least eat it; respect its life.

Even more infuriating is when I see something like a hot dog eating contest. So disrespectful..

Many people here on ATS know that I am a dedicated veterinary surgeon specialised in primate conservation with many many years dedicated also to research into some of the worst viruses that can affect the animal and human population.

Not trying to justify myself but thought it needed to be said.
People should remember that WE originate from hunter/gatherers...

Personally, I will not eat factory produced food and only supply my family with if possible "hunted" meat or traditional farm produced livestock and homegrown veg.... not the big corporate chemical pumped up mulch which is supplied by companies such as McDo KFC etc etc etc...
