The cabbage (after having the bottom leveled) should be sliced in that orientation? Stalk at bottom?

eta: I've got several kinds of cheeses right now, I'm wondering if a cheese might be good melted over it. Cheese and cabbage? What do you think? A milder cheese, maybe like provolone or something?
