You back up the whole database, because whether you use Arcserve, Backup Exsuck, or Netbackup, or whatever you can restore on a granular basis.

Or it is specifically engineered so ANY emails that need to be lost can be "lost". But to be believable, you need to lose EVERYBODY's email for the period in question.
