Hahahahaha! Don't care for lamb meat, but didn't mind it with some mint sauce.

I shared some poetry I wrote many moons ago if anyone is interested.

My secret meatballs are 1/3 lamb. it has a richer flavor and better texture than ground beef.

1 lb sweet italian sausage
1 lb mild italian sausage
1 lb ground lamb
4 cloves minced garlic (i actually use a whole head...but not everyone likes garlic like me)
2-3 tbl fresh minced basil
1/4c parm. I use the cheap crap in the shaker, since it is already powdered

I roll them into 2" balls and bake on 350 for 45 minutes or so. Put them all into a pan, cover with sauce, mozz, and parm, then back for another 10 minutes. Since we don't typically eat carbs, I make zuchinni noodles with my Vegetti, and serve with marinara and the meatballs.

Damn that sounds good

We've got slow cooked pig cheeks tonight, it's the first time we've tried them.

Dusted with salt pepper and flour, then browned.

Onions and leeks softened until brown and added to the cheeks

Then pour in 8.5 fluid ounces of dry cider, and 17 of chicken stock. Add to this 1 Tspoon of honey and dijon mustard.

Slow cook for a few hours and add apples about 20 mins before you want to eat.

Remove the meat and reduce the sauce. Whilst reducing ad fromage frais to taste and season to taste as well

I'll let you know how it goes

Served with roasted vegetables and sautéed potatoes.

I love it when the wife is off school

I'm doing good. Busy, but busy is very good.

Spring is finally here, I just bought a 3 room tent, and I am just itching to go camping!
Now I gotta wait two months...lol

I could camp in weather like this, but Roses and our daughter would hate it.

We're off to Scotland at the end of next month to meet up with some members for a long weekend, not camping unfortunately I love camping but options are limited here.

Nothing like pitching up and lighting a fire, setting a few traps and cooking what you catch, (or going to the fish and chip shop as often as not LOL)

Outstanding meat. It really is. I am a big fan of facial meat. Barbacoa is another favorite of mine. Tamales, when done traditionally, are made from pigs head. Anymore people just use a shoulder roast or carnitas (pork shoulder pieces).

You ride a bike...that is pretty redneck. Sure, you are in the club.
